Mashed cauliflower

I read of this somewhere and decided to give it a try. Mashed cauliflower can be used like rice or cous cous. I was a little uncertain but, to my surprise, it's really good.

I was making a ratatouille and decided to give the mashed cauli a go with it. I took 1/2 a big cauli, broke it up into florets and steamed it. Then rough sliced it up with knife and mashed briefly with a potato masher. It's not the texture of mashed potato, more like cous cous. Since tried it with a veg chilli and it works just as well as rice.

mashed cauliflower is improved out of sight by a bit of butter, some garlic and just a whiff of coriander

if you really want to push the boat out, roll it in flour and deep fry it

Cauliflower is much better if you puree rather than mash it. It has a very subtle flavour and personally I wouldn't overseason it when using it this way. However, in florets, it is also fantasic as the basis for various curries and has a particular affinity for mustard seeds.

We have cauliflower curry sometimes; with cumin, mustard seed and coriander. Prefer it mashed though as I'm becoming less of a fan of spice.

Try cauliflower florets raw, as crudités or in a salad. It's delicious (but not too much if you want to remain socially acceptable afterwards).
