I've just come back from a holiday in Crete (Malia) and stumbled accross these guys and their website.

I booked a trip with them on one of my days out there and ended up doing another it was that good.
I highly recommend a ride with them if your on the island. They are pretty felxible and will tailor the ride to suit you.
Crete is a lovely place and they know the island like the back of their hand.
