Ich bin Powerfrau!
Absolutely divine smells issuing from the kitchen (although it will look like a bomb's hit it when I go in).

He makes chocolate fudge every Christmas for his grandparents. Sadly three of the four have now died so I am hoping some more of the fudge will make it my way...

It's his only cooking experience in the whole year, pretty much, but it's worth it!

I bought some butter fudge from Aldi last week. Really nice crumbly stuff

I fancy having a go at making it myself one day

White Fudge

16 servings.
Ingredients:
1 1/3 cups sugar
1/2 cup butter or margarine
2/3 cup non-dairy liquid coffee cream
1/8 teaspoon salt
1/2 pound white chocolate, finely chopped
2 cups miniature marshmallows
1/2 teaspoon vanilla

Add first four ingredients to heavy saucepan and heat, without stirring, until mixture reaches 238F on candy thermometer. Remove from heat; add next three ingredients and blend together thoroughly. Pour into 9-inch square pan. Allow to partially cool, then cut into squares. Allow to fully cool in pan before removing squares

Where do I get the "non-dairy liquid coffee cream"

And what would happen if I added brown chocolate. Say a Galaxy? Nothing fundamental, I assume.

OT but M&S are doing a £10 for two jobbie. I picked up a large decent Chicken, decent roast potaoes, decent red wine and...wait for it...

...a large Sticky Toffee Pudding which is now in the oven!

All for £10.

Get yourself down there!

sorry I have forgot that non-dairy liquid coffee cream is just for the hotels! but I have used Kahlua in the past and as for the chocolate just use what you wish :tongue:

I have more If you wish

Is that more Recipes for Fudge, or more recipes.

Do you have an easy peasy, (not too many ingredients) for gravy, or sauce to go with Turkey please. I have ordered a free-range Turkey crown from a local Farm shop. This will be my first year cooking a turkey, which is why I have chosen a Crown, and have no idea how to make a good gravy.

I have got some Bramley Apple Jelly, also to go with the Turkey.

Speicher this is one I love

Get the Veg stock bubbling in a saucepan on a medium-heat hob. Skim excess fat from the turkey roasting tin, leaving about 3 tablespoons of liquid fat with the dark turkey juices in the tin. Place the roasting tin on the hob over a low heat and sprinkle with flour.

Whisk the flour into the juices to form a smooth paste. Begin to add the hot stock a little at a time, whisking briskly to blend. As the stock is added and it hits simmering point, the gravy will thicken. If it is too thin, let it cook to reduce, if it's too thick, add some more liquid.

Add a splash of wine and continue to reduce. The gravy should cook for 15-20 minutes. Season with fresh pepper and some salt, then pour into a warmed gravy jug to serve with your roast turkey.

Job done

You can change this for any Meat and even for a Veggie dinner. Swooping the wine for port, rum, whisky, beer....... will change it as well
