I rather like Amber. But to me Evelyn is Evelyn Waugh! It does shorten nicely to Evie as said. And I think what @Pale Rider said about the colouring in is really important.

My children have friends of both names, shortened to Evie and the friend called Amber is actually short for Amberleigh which I hadn't heard of before. Evelyn was on our short list but we decided it was too close a name to someone else on the family.
