Sit on the bike, then mark where your hands are at the point where you don't feel too stretched out, the bars may have markings on to guide, but I would do it in small increments, as you can't put it back if you cut off too much.

The tip on the Park Tool Video is good about doing a press up to measure where your hands fall naturally is a good one to give an idea of where you need to be width wise.

Fit the brakes at the same spacing they were on the original bars then move them in very small increments. Whatever spacing gives the best ergonomics is the width you need.
I wouldn't be surprised if you end up refitting the original bars as you've found out the hard way that over-wide ones don't work very well and aren't comfortable.
I am actually finding them alot better so far. For odd reason, i find they are much better for going uphill. But that's just me

well i measured the other day and when i di press ups, they are basically 800mm apart

Probably because your chest cavity is more open, allowing more oxygen in, as above give it time to see how you feel with the bar width as it is

Way back when I was modifying my stock mountain bike with better gear I put a wider handlebar on it than it came with. I ended up loving the new wider bar far more than the stock one that was on it. If felt the wider bar gave me more stability and was more comfortable. It definitely gave me more leverage going up steep short climbs. It's still on after some 15 years.
