BUT, If I change my big ring or my freewheel, for different sizes , to give me a little more GI's, will it change my chain line ?

Generally, No (although if we are pedantic, yes it could by a fraction as not all brands are equivalent in width etc.)

As long as you buy one with the same offset, iirc they are usually 43mm, velosolo'website explains it really well
