well it was just over it's use-by date... I've beaten-it down with copious Sicillian red ... am I gonna be safe-enough for the morning club run?

I'm fortunate to live within easy cycling distance of several stilton producers, of which Colston Bassett is probably the pick (Stichelton is at least as good, but a) it's dearer, and b) there are hills in the way!!!). As a consequence, I tend to buy rather more than would form part of a sensible diet. A large portion of the "past its use-by date" (hah!!!) lump went into my own-recipe stilton potato cake last night, thus nullifying any adverse effects of the mould (the very essence of a good stilton!) and even the rind (which I doubt many people use, even for bird food).
Absolutely delicious, loaded with calories, and probably even more loaded with cholesterol.
