Overweight cycle touring

Out of idleness I was googling 'touring with a Big Dummy' this morning (it's a cargo bike). It bring's up some interesting pics of touring loads. Here's one picture of a fully loaded Dummy. It's for an overnight trip.

As someone who doesn't drive, I must say I'm a jealous as hell.

I presume the spare set of handlebars behind the saddle are for pushing up the slightest slope ?
