I stupidly decided to get my Scouts to run a pop up restaurant for their parents this coming friday, in aid of our local food bank. So far something like 50 parents expected!

I'm feeling a little bit...

If the parents are anything like I had to contend with, you will have loads of grub, & no one there to eat it, our group did free pie n peas for the AGM/awards evening one year, the 3 usual suspects that would always help turned up, plus 6 cub parents non of the scouts parents could be bothered, as per usual, I make no wonder I called it a draw & packed it in.

Slow cooker is a great idea. Prep in your own time, keep it warm, minimal washing up. You can also do a big arse pan of rice, just keep the lid on. Look up how to cook rice properly (wash it at least 3 times, bit of salt, 2 parts water to 1 part rice, bring to boil then as soon as it boils turn down as low as you can without flame going out).

Also you can freeze any leftovers, so no waste (hard to judge amounts when you don't know exactly who's coming).

I don't know much about Cinco de Mayo
Sounds a bit scary but I'm sure they won't be expecting anything incredible! Whatever you slop out will be taken with good grace I expect.

Big old pan of lentils with frozen veg mixed in and pasata and curry powder. Big old pan of rice. Some chapatis.

Buzzing now!!! 51 parents/siblings. 6 chefs - 1 on starters (pine nut and feta salad or pate on wholegrain toast with pomegranate salad), 1 on meat (chicken jalfrezie), 1 on veggie (lentil bolognaise), 1 on rice, 1 on pasta, and 1 on dessert (tiramisu). 8 waiters including "comedy Manuel" waiter (don't ask, they thought it was a good idea), and 9 assorted entertainers playing violin, keyboard (she segued from midnight serenade to the theme from the muppets and back again without dropping a note), french horn, spanish guitar, juggling and circus skills. 1 maitre 'd who stood in the exit with a billy can in her hands at the end of the night...absolutely priceless! Amount raised for our local food bank.....£704. So proud of them all
