What components do I need to buy to convert my Shimano Ultegra pedals into Garmin pedals? I would like to convert left and right pedals, already have an Edge1000 computer if this helps??

You'd need these: http://www.wiggle.co.uk/garmin-vector-2-pedal-power-meter/ which are compatible with the Edge 1000

You can't 'convert' Ultegra pedals into Garmin pedals. You have to buy Garmin pedals.

Has anybody actually used any?
You're asking this a year (+) after your first post. And 'yes' lots of riders have used them. You screw them in and link to the 1000, (Ant+). You'd need to change your cleats to Look Keo compatibles (from the Shimanos you've got now).
This 'longer term' review is not complimentary though: http://www.cyclingweekly.com/reviews/power-meters-bike-components/garmin-vector-3
