Mmmm. Toast, split and scoop potato salad inbetween the welcoming sides of Pitta.
You can alwats add: bit of sweetcorn, a small dose of Encona hot pepper sauce or not so small of Sweet Chilli sauce to either cheek prior to salad application.
Potato salad with longer sliced gherkin is nice too - always work on sweet/sour, soft/crunchy to give a thrill when consuming.
Celery, chopped, sultanas and peanuts, mixed with salad cream and mayonnaise + S+P etc is a good fill too - for the crunchability.

Green olives stuffed with pimento paste are always an interesting addition, and modulate the texture.
