I'm just wandering also how the SRAM bike has a more expensive group set, is lighter But is a cheaper bike and the specs look very similar???
I think because Planet X have a large stock of SRAM groupsets I think. I recently got a whole RT58 for £500 with Rival 22. The cheapest I could find the groupset is ~£350...thus PX are getting the kit far far cheaper than RRP

Also, I think the SRAM groupset is also more expensive as a standalone piece because many fewer manufacturers use it, economies of scale, supply and demand and all that jazz

The SRAM bike doesn't appear to have Force calipers, whereas the Ultegra bike has Ultegra calipers. That might account for some of the differential. I'd still get the SRAM bike, personally. The FSA brakeset is just as good as any other.

I guess that Sheffield is a bit of a hack from Westhill.

Is there not an bike shop, remotely local to you, with a SRAM equipped bike that you could have a test ride on?
Yes, in Aberdeen probably as there is a few. I would just feel a bit rude testing bikes that I'm not going to buy. How would I test them anyway? Turbo trainer?

You need to try and get your hands round the SRAM and Ultegra hoods and see which is most comfortable sitting on the bike, especially when pulling on the levers from the hoods. Do you have a friendly LBS - the reason I mentioned Evans above is they are very agreeable for test rides, either sit on or on road, of course they don't stock PX but it seems you are decided on the frameset, just not the groupset (I'm sure Evans will have something of a comparable geometry to the PX bike). Alpine cycles in Aberdeen are part of Evans http://www.evanscycles.com/stores/Alpine-Bikes

In terms of operation, the way of shifting with the levers is different between Shimano and SRAM but the way the chain shifts across the cogs is comparable I'd think, so it'll come down to ergonomics, feel, comfort. The shape of Shimano hoods simply doesn't work with my hands, hence I have SRAM but most guys seem to have no such issues with bigger hands and longer fingers
