Take the tent! - It will give you freedom
Dont stick to a schedule, go with the weather, your feelings, and stop at stuff that interests you
My most important bit of advise is to buy the BikeLine books for your route, in English for the Danube and Elbe, in German elsewhere (it does not matter if you cant speak German, its the maps you want)
These are the German routes they cover, but they do a lot more, Austria, France, NL, Czech, and a few elsewhere
