for a good poached egg... the egg needs to be a fresh as you can get it. The older the egg, the runnier the white.

A friend with hens is the key to perfect poached eggs.

I boil the kettle, pour into a small frying pan on a low heat (steaming but not bubbling) and crack egg into water. No vinegar, just hot water about 3/4 inch deep. If you have a pan lid that fits the frying pan... they'll poach a bit quicker.

edit... if poaching 'old' eggs, AndyRM's poach pods are advised.

see my mother has that the opposite way around... dropping in water is 'coddling' to her... and using a mould is 'poaching'... to me, they both poached, but one method is better than the other.
 
If it's not stick together a neat little trick is put the whole egg (in the shell) in the boiling water first for around 20 seconds. Then, when you crack it in, it's already very slightly congealed. You need to adjust your cookjing time down for this.

For me boil kettle then add to a hot pan with some white wine vinegar crack egg into a cup swirl water in pan get a good whirlpool going then add egg leave for 2 take out mmmmm nom nom

I've tried the 'vortex' ploy, and managed to get a perfectly circular poached egg. Sadly the circle was stuck around the pan sides, not in the middle!! <DOH>

What RPM was your whirlpool, if I may ask?

My normal method is to get the water boiling, then crack an egg into a ladle then gently pour it into the water.

You have to stir it as fast as you can, so the vortex makes a hole in the water. Drop the end in the centre of the hole. I imagine that it could go wrong if the egg is not dropped in the centre.
