Rebuilding damaged bike

Have recently had accident when farmer in pickup pulled out of blind access and I went into front wing at about 20mph and went over the top. A few minor breaks and bruises etc but should be OK in a couple of weeks.
Will be getting a new bike from his insurance, but I wonder if it's worthwhile making a winter bike from the good bits from the broken bike which is a 2012 Giant Defy 2 only two months old.
Damaged:
Frame - caved in rear stay, buckled seat tube, grazed front down tube - so a writeoff
Front wheel - slightly buckled, and took big impact
Forks - doesn't look damaged !!! but must be surely
Handlebars - bent
Rear wheel - slightly bent, probably repairable
Writing this I appreciate this doesn't leave any major bits for making a new bike, but I would enjoy giving it a go if it made any sort of sense.

Bin it, anything that badly damaged isn't worth risking.

Rescue the groupset, anything else like frame forks and wheels after such a serious impact, bin.

I'm going to save what I can from the old machine, buy a half decent frameset and build a bike to sell. You could build up a nice winter ride with the saved bits. I'm going to sell the built bike off as I already have a winter machine.

My accident was the day before yours, 10 days ago.

The bruising in the legs, knees and ankles didn't go black until a week after, and as it is now I'm struggling to walk ! It's going to be interesting to see what the insurer offers.

I'll keep the good bits, and see if a decent frame and forks comes up.
