Recipe for trout?

You folks always come up trumps with great answers to the oddest of questions. So here goes.. my neighbour gave me big trout he caught in the Tweed the other day. It's in my freezer, and I want to cook it tonight for 4 or 5 people. I have a really busy day today, so can't faff around doing owt complicated, so just an easy-peasy recipe is what I'm after... :biggrin:

I've done them with a couple of slices of smoked bacon in the cavity, you might need more if it's a big one and then sprinkle a few herbs inside, bit of butter and then wrapped in tin foil and half an hour in a hot oven, that timing might need adjusting for the size, mine weren't so big. Simple and tasty. The juices can be made into a sauce quickly once you get it out the oven with a bit of white wine.

Serve with some lemon juice and spuds and other stuff.

Don't offer any to Rigid Raider, he won't thank you for it.

ooh, the rosemary and lemon idea is good too...
Got it out of the freezer too... thanks for reminding me... and I found some carrot soup in there too, I made a month ago... yum yum...

Similar to Longers, stick some spring onions, coriander and ginger (in fact any remotely oriental stuff) in the cavity. Sprinkle with soy and rice wine/white wine/sherry whatever you have, wrap in foil and bake. Serve with rice and a salad.

Nice ideas folks... decision made now, and peripheral shopping done... was going to do the bacon one, then suddenly remembered my 2 vegetarian daughters (well, they eat fish), so they wouldn't be so keen on the bacon!
Going to put parsley and thyme and lemon in the cavity, bake in foil, new spuds and green beans.... yum!

Sounds nice. For future reference, dill sauce. Smear it on (trout or salmon), wrap in foil, in the oven. Foolproof and fast. Available at all good ironmongers.

Instead of using tin foil, wrap the fish in wet (water/lemon juice) newspaper. Not only is it novel to serve, but the skin will stick to the newspaper when you unwrap it.
