Something that went down well at the last FNRttC to Whitstable:
Sticky Carrot and Marmalade Cake
200g Wholemeal flour
1 tsp ground ginger
1 tsp baking powder
40g butter or Stork
50g dark muscovado sugar
225g grated carrots
50g seedless raisins
4 tbsp ginger marmalade (Waitrose do a nice one)
1 beaten egg
4 tbsp milk
Preheat oven to 170c/Gas 3.
Mix flour, ginger and baking powder.
Rub in the fat until the mixture resembles breadcrumbs.
Stir in the sugar, carrots and raisins.
Mix three tbsp of the marmalade with the egg and the milk.
Add this to the dry ingredients.
Stir well and transfer to a greased and base-lined 23x10cm loaf tin.
Bake for 50mins until firm to the touch and golden.
Turn out to cool.
While it's still warm, brush the top with the remaining 1 tbsp of marmalade.
Wrap in foil and store for two days before cutting.
