I have the same problem replacing my disc wheel on both my disc bikes one with GRX the other Ultegra. I put it in the small sprocket and small chainring in the case of Ultegra, get it out without too much problem when I put it back, I pull the derailleur back line up the chain with the small sprocket once again but when I try and pull the wheel into position it moves left so that it hits the chainstay on the rotor side.
The only way it doesn’t do this is if I line the chain with the 3rd or 4 th sprocket even though the shifter is in the small sprocket position then it goes in without too much problem I then pedal the chain to sort the derailleur position out.
Frustrating that I can’t master this!

is it just me?

I do it too on bikes that don't have clutch mechs. The chain tension cocks the wheel to one side
