Thanks for the overview! As above, which would gravel best sit under?
I've never used 3 bolt cleats. A lot of people prefer them and I doubt they're "wrong" but 2 bolt cleats have always done fine for me. You can get a good variety of shoes and double sided pedals are really user friendly.

I'm not sure what "gravel" is all about really.

I’ve recently just made the transition to clipless I opted for the following;

really happy with them both got them both off Merlin cycles, couldn’t fault the service.

Mtb, 2 bolt SPD. You’ll destroy road shoes if you have to walk at all!
In other words, not the ones in the post above! You want a recessed cleat
