How do you decide what width tyres to get?

I've had a mountain bike and put road tyres on it (can't remember the width but they were no skinny minnies). I've now got a cyclocross with 35 width knobblies which I should really change for road tyres. I have no idea what width to go for, but I was thinking 28.

Anyone have any views?

Rather depends on the rims you have.

Since watching this vid I have not had t use levers t get a tyre on (23mm gators and krylions, and marathon plus 32mm)

Gatorskins can be a bugger though - Spa Cycles excellent video notwithstanding - I've had to resort to using a cable tie around the tyre as a 'third hand' to get a new Gatorskin on without using levers.

Don't know how wide my rims are, but I know other people have gone down to a 25 size tyre on the same wheels. Bit aprehensive of going that narrow though as I've been on much wider ones up until now. Should I be worried?
