You might find this map handy in your winter researches RichP - available from other places than Stanfords of course. It's German - Germans are great fans of Sardinia - they've been going for years.

Maps of Sardinia are generally very poor - lots of surfaced roads aren't on them - and lots of roads perfectly cyclable on a touring bike (white roads - macadam but no tarmac) aren't shown either. Signs still a bit dodgy as well in some places.

I've bought any number of maps looking for more data but they are all based on pretty much the same limited data. Vast majority are 1:200,000 at best.

Touring Club Italiano (TCI) (yellow) isn't bad either but the reason I like the German map is that it marks scenic patches of road (TCI does as well) and also shows what it considers to be notable churches/historic sites etc marked in red. Finding some of those churches might then be a challenge though - many in middle of nowhere. I'm a heathen but the old country churches are one of Sardinia's glories - they are very charming.

Forgot to say - the other nice thing about the German map is its simple shading system of marking heights.
