In my experience the roads early on a sunday morning (when sportives tend to start) are quieter than they are on saturday mornings. From lunchtime onwards it might be a bit different so it depends how long the route is and how slow the riders are i suppose.

Hi, I have run a few Saturday events and numbers are a lot lower than on a Sunday event. When we run our Pennines/Saddleworth events we can only hire our preferred rugby club venue on a Saturday as they have a profitable car boot sale on Sundays. As I know the money we pay goes into the youth team at the club I decided to stick with the Saturdays anyway. I also thought that if you were doing a bigger ride that you would then have Sunday for recovery or time with your family. The feedback I have got is that people simply prefer to ride on a Sunday, I think it's more through routine than anything else.
