Looking for a super deal for a size 56/m/ml carbon frame,shimano 105/ultegra Disc brakes....Any of the top bike manufacturers..new or newish. nobody seems to be wanting to deal these days, ive offered sacks of potatoes and scrap metal and all to be turned down...

They have no real need to deal, bikes are selling out at full price, man6 shops have almost nothing left, esp in common sizes

You might still get lucky on an older model but it’s unlikely to be a real bargain

I reckon you’ll need £1.5-2k minimum unless going used

There were a few contenders that meet your criteria in the latest Cycling Plus. Not sure if these necessarily qualify as a 'top bike manufacturers' as it lacks the cachet of the big boys, but you'd be hard pushed to beat them for the money (albeit the first one isn't carbon and the second doesn't have discs, but you're going to have to sacrifice somewhere for a bargain):
