You could try this Iranian stew

With yellow split peas instead of the meat, the aubergine is very flavorful, so it will taste great without meat.

Alternatively, this Iranian side is very easy to make, and has loads more flavour than houmous

Don't listen to the heathen @winjim, aubergine is one of the most delicious vegetables there are.
 
My Mrs does a wonderful Aubergine gratin. Veggie to the core. And I like it. Tasty and filling. It's nearly enough to make me turn veggie, but guess I'd get fed up of it day after day.

Oh l know , l grew this plus about four other varieties in various shapes and sizes .....and many thanks for the suggestions !

Not possible with just one, but parmigiana has become my go-to recipe for aubergine. Think lasagna but made with fried aubergine slices instead of lasagana sheets. This recipe on the BBC site is excellent - we always substitute cheddar for the mozzarella. Can't be arsed with mozzarella - it costs a fortune and tastes of nothing.

I agree with the mozzarella tasting of nothing, but you put parmesan for flavour, and mozzarella for texture. The advantage of mozzarella is that the fat doesn't separate, so you don't get the "oil" floating at the top that you get with cheddar. Summing up, mozzarella is just scaffolding.

Thanks for those recipes l will try both (l have grown a lot of aubergines this year) l even have some grapevines with a lot of as yet unripe white grapes so l'll use some of those !

I have loads of them growing in my vegetable garden so not a problem and l do agree about the choice of parmigiana !
