Sizing help please...

Been looking at new bikes and this is one of a few that has caught my eye.

My current steed supposedly has a relaxed geometry and is a size 53, has a 545mm toptube, 160mm head and 80mm stem.
I'm 5' 7" with 29" inseam and comfortable on my current setup.
Most bike size charts i've looked at suggest i should be on a small frame.
Medium frames, with the appropriate longer stem, tend to be more prominent in my local stores.
What difference would a smaller frame make? Pros/cons?
If my current geometry is relaxed i'm willing to consider something slightly sportier

The pro is that you can make a small frame bigger but sizing by height and inseam is generally rubbish. I'm 6ft3 and riding a 54cm frame, every "guide" recommends 60cm+ one actually recommended a 64 :laugh: (Might have been Trek, can't remember)
