I make a gallon or two of sloe gin most years, and slider and sloe and vanila ice-cream. Raspberry whisky is also very nice, but the cheaper whisky the better, I normally buy whiskey rather than anything decent.

10 weeks is not really long enough, the sloes have to be in the gin for at least three months to get a good colour, and rested for three months to develop the full flavour.

I've a couple of kilo's of sloes in my freezer, along with blackberries and plums. I'm waiting on two gallons of grapejuice to finish so I can get on with that as well.

when you decant the berries, de-stone them place them on a cold metal tray and slather with melted chocolate. makes the most amazing choc-sloe-alcohol thing ever!

also sloe gin should be left for at least 6 months.
i have found that the sloe's and fruit in general this season has been really poor. all except Yew that is (taxus baccata) for some reason that's never bothered by weather "Mmm strawberry snot"

Sloe gin, damson gin, plum vodka and cherry brandy. All of which are better if left on the fruit for at least 6 months, and the flavour improves the longer you keep it once you've taken it off the fruit and bottled it.

The key is to make enough so that what you're drinking is 2 years old.

Once removed from the gin, and de-stoned, the damson make a really good addition to a fruit cake. (WE used a simnel cake recipe and substituted damsons for all of the dried fruit)

There's also a rumtopf on the go

I never used to think that hip flasks were any use until I discovered this 1.6l one. Makes it a worthwhile accessory.

I was under the thought of you had to wait until the 1st frost before the sloes are at their best.

Got a litre of blackberry gin on the go at the moment, sloes will be another few weeks.
