I do not know Fearlessly WolfsItAll's recipe for a starter, but I am sure it will work. Ours have been going a few years now, we have two, and every week we put the clean unused stuff in clean jars, they look a bit like something that might develop a mind of its own if you do not use clean jars now and again. Once you get the hang, they do turn out gorgeous bread.

:laugh: it's what I had to do eventually... it wasn't going to make good bread.

Just keep feeding it. Its like having a baby or a pet!

Don't rush it, keep feeding it and when you get to the stage of making a loaf let it prove for much longer then usual. Overnight is good. It's a tasty loaf but takes two days in the making, once you have your starter. The first day the starter is out of the fridge, when at room temp feed it, 12 hours later start making the loaf, with a really long rise and prove and then bake.
Some starters have been kept going for years (50 and more), mine is only four years old and I have been months between loaves sometimes. It makes a really tasty loaf and is well worth the effort.
 
It's a doodle to make. Just takes lots of time with it doing 'nothing' or it proofing in a fridge overnight. Got a preferment batch going now. Will make it into bread tomorrow and leave to proof for 24hrs before coming on Tuesday... Nice tasty bread sourdough is. I usually make a rye sourdough and a wholemeal sourdough loaf at the same time. Great stuff because it doesn't really go off. The starter is pretty easy to keep going, it's rather like a pet. You have to keep it clean and feed it periodically, less in winter (every other day or so), more on summer (sometimes twice a day unless you put it in the fridge) but it is pretty easy to start and easier still to keep going... Sadly I will have to start mine again when I move in a couple of months but it's no big issue.

Can't you take sourdough to Australia?
