Split my mayo :(

Its hit n miss with me. Sometimes it works out the best dream mayonnaise ever then sometimes it goes all wrong and splits

Where am I going wrong, I think Im doing the same thing every time adding the oil at a very slow rate and whisking for half an hour.

Im determined to nail this one forever

Hi. Yeah though I add the mustard last. I'll try adding part the mustard first next time.

Off to Asda to get some ***mans lol. Never understood why its so expensive ?

Edit. maybe its expensive cos its a pain to make ?

Thanks for the tips on mustard first, and that Heston video was excellent on for advice on cooking with eggs. Not seen any of his cooking programs before so'll be watching more of em

Nailed the mayo. I just hope it stays that way :smile:

It's years since I made mayonnaise, but I'm sure I remember something about rescuing split mayo by going back to the base ingredients before eggs were introduced and then very slowly adding the separated stuff. Still, if you can rescue it with a drop of cold water, it'll save you from ending up with a lot more mayonnaise than you'd planned in the first place.
