Straddle the line, discord and rhyme
I'm going to be controversial and say the cycling road race. I think TTs and track cycling are well within the spirit of the Olympics, citius fortius and whatever the other one is, but the road race just doesn't seem to sit right in that context. It's a team event with individual medals for a start.

Depends how well it's done, whether it's with concrete posts & gravel boards or just using wood posts.

Five strand wire. Sent into the bush with hand tools, a month's rations, and a dog for company. Cut posts, dig holes, and strain wires all by hand. Points for distance and straightness of line. He's a sport that will make Test Cricket rivetting.
Does that include synchronised diving?
I watched it for the first time last night and found it absolutely amazing and fascinating to watch. The skill and the dedication that must go into training for what they do, all for a couple of seconds of diving into a pool. It was really good to watch.
Who was doing the commentating? It sounded like they really knew their stuff and were passionate about it. I'd hate to be a judge though - all over in the blink of an eye.
