Get a box and put a bow on it. Inside, put a model of a bike, lego or something, or a picture of a bike. Include a made-up certificate saying "This certificate entitles g/f to one bike of her choosing on a bike-shopping expedition with Hicky". Add a small posh box of chocolate truffles.

Then take her out to choose her bike, she will soon see if she wants a light road bike or a heavier Pashley-type or whatever. Give her an approximate budget!

If you give her a bike which she doesn't like she might feel duty bound to struggle on with it because you went to so much trouble and might be offended if she wanted to change it.

Why don't you get her a real vintage bike off eBay or wherever. Plenty about and cheap as chips so money left over to tidy it up and personalize it.
