Sweating !!

middle of nowhere in France
when i started cycling in may i hardly seemed to sweat, bit damp yes
but not wet and sweaty, i thought i was not cycling hard enough.
Now in winter i have a proper cycling windproof jacket and even though i don't get hot
i find on taking it off its soaking wet inside. Am i missing something ?
 
Looks like your fitness is higher than you think and you are working out harder, sounds daft but it is possible

Maybe in May you only had lightweight clothing on. Sweat will evaporate away through your clothes.
I know riding in Portugal in summer the temp was way up and I was as dry as a bone. That is until I stopped.
Once the breeze wasn't rushing past me I began leaking like disgruntled MP

I sweat loads. The jacket, as has been mentioned, isn't as breathable as you think. My kit gets damp but not soaked under my minter soft shells. The Altura Varium is excellent. I have a full on windproof that I dare not use unless it is well below freezing. It's way too efficient.

You might want to try some other soft shell type jackets with windproof fronts and arms, rather than the back ?

Yes, I'd go with this explanation first. As you sweat, a warm breeze will dry it out very quickly.

Hang on, knees and stuff for low temps. Not saying anything, but I live by keeping mine covered. Works for me always has. Old school club training. I haven't had any knee trouble ever.

Up to you. Has been a "knees protected for me", and I have never had any trouble. That's the only bloody part of me that does not cause problems riding my bike.

For me keeping the quads warm is the issue, so winter tights keep knees and quads warm.
