Blackberry cupcakes with some Swedish Glace iced cream.

Cake mix:
120g Caster sugar
150g Melted butter
Wisk together.
Beat three eggs and wisk onto the sugar/butter mix.
Fold in 160g plain flour.
Spoon mix into silicone cupcake liners layering with blackberrys.
Put remaining mixture into Ramekins for extra large pudding cakes.
Put in preheated oven, 180 degC, for 20mins for the small cakes and 30mins for the large cakes.

I have just finished surrounding some smoked salmon fillets with sauted spuds, chantenay carrots and hollondaise sauce. And some Kiwi sauvignon blanc :cheers:
I have some deconstructed summer pudding waiting in the fridge :hungry:
For each person, you need:-
Half a waffle
A handful of frozen berries
Some Greek yoghurt
A few fresh berries - I used golden raspberries
About a desertspoon of jam
A glass - tumblers work well.

Put the frozen berries into a pan, along with the jam.
Bring it up to a boil, put the lid on, turn the heat off.
Toast your waffles. Cut them up into cubes.
Put half the waffle cubes in the glasses, divide the warm berries between the glasses, and then put the rest of the cubes on top.
Add enough Greek yoghurt to come near the top of the glass.
Garnish with the fresh berries. Chill in the fridge.

Not eaten it yet. SWMBO is rabbiting on the phone...
Mind you, I'm looking at specs for a Shimano Positron 400 rear mech which was crap when it was made in the late Cretaceous, and doesn't belong to me anyhow. That makes me the sad one, I suppose.

Wow, Nihal, do you have to go round the whole of India checking who wants a last cup?

We've been out for a drive, and a short walk in a country park, sustained by tea, cake and an ice lolly:hungry::cuppa: . NT neglected to take any crutches (which I failed to spot, or I'd have insisted:headshake: ), and managed about a mile on unaided legs, which is a personal best since his leg went pop. :highfive:
