Arch I have finished the back of the cow. I'm now having problems with the front. Have cast on 28 st and p1 row, then knit one row then purl. Now the pattern states for the next row K2 (inc in next st, k3) 6 times, inc in next st, k1. 35sts.

Oh god, I couldn't possibly begin to explain it in words.
Seriously, I'd have to show you in person, it's not something words alone can explain. You need to see pictures at least. It's done by picking up a loop between stitches as you knit, but it's hard to describe.
Have you tried googling for an online picture guide? Maybe a video? If all else fails I can show you, or lend you a book with pictures of the basic techniques, but it'll have to be next week, I'm off to Manchesterford tomorrow...
PS. if you google, watch out for American sites, they use all sorts of different terms).
PPS. It might be worth doing a quick trawl round some charity shops for a basic knitting book that has step by step guides. Even if it's an old book with out of date fashion patterns, if it has a step by step guide, that won't be out of date.
