Good afternoon everyone. Late today - I've been busy cooking to enter the Guardian recipe challenge. The current topic is corn meal - which personally I'm not over keen on (think polenta). It tends to be a bit bland. Here's one of the dishes I did (tomatoes stuffed with parmesan polenta, thyme and black olives):
