Lancashire Hotpot was a success. Its so easy to make (I'd forgotten how easy).

In a casserole dish layer up some browned lamb chops or steaks with thinly sliced onions and thinly sliced potatoes (floury potatoes) and chopped kidneys (raw) seasoning with salt and pepper as you go. Just repeat a few layers and put a final layer of potatoes on top. Pour over some vegetable or chicken stock to just below surface of potato. Cook at 170C for three hours. Uncover and cook 1/2 hour to brown top.
