Goose here! (with a bit of Turkey for good measure).


Smoked Salmon, scrambled eggs and Champagne for brekkie.
Goose, Turkey, Gammon, Pigs in Blankets, Parsnips Sprouts, proper Bread sauce, Red Cabbage, King Ed's cooked in Goose fat .... after that I really don't care!
Cold supper of meats pickles and some scrummy Cropwell Bishop Stilton!

Chablis, Chateau-Neuf and Montepulciano!

I was looking for your thread on xmas goose a few weeks ago as I bought one to try with a view to Xmas. Anyway I couldn't find it and cooked it anyway. Made a stuffing of the goose liver and apricots and onions, fried in sherry and white wine, which was lovely. As was the goose but for some reason it was tough, tasty but tough. I can only think this was because I bought a frozen goose and thawed it but it put me off sufficiently to go for a safe pork option for Xmas (not a turkey lover). I'd like to try again but it's so expensive, the chance of getting it wrong discourages me.

I think you're right about having a frozen goose which doesn't help the sitiuation. Also, the meat distribution on a Goose is quite different, it's like a giant Duck rather than like a Turkey, so the breast meat is not as thick. Therefore it's pretty easy to overcook and toughen. Don't let it put you off though!
 
Bacon sandwiches. Seriously.

Gave up trying to get the kids to sit down when they were younger and neither of us wanted to spend time cooking when we should be enjoying my fairly rare Christmas Days at home with them. So we now go a bit Norweign and have the meal on Christmas Eve instead, then visit MIL later on Christmas Day for cold meats/pickles then my parents on Boxing day for another big meal.

turkey and trimmings for us , not sure who apart from em and other half , will see who turns up on the day , have warned the kids that they are helping with washing up ect etc , so no doubt the wont turn up if it involves work or chores

Lunch: Seasoned Yorkshire pud with stilton and onion gravy: Turkey with mash and roasties,sprouts, glazed honey parsnips, squash, carrots: Eaton mess and/or triple choc cake

Sure I can find a bottle of plonk from somewhere :laugh:

Turkey with the usual trimmings here, plus I'm about the only sprout eater in the 9 people who'll be eating Christmas dinner, so I can fart my way through the evening to my heart's content.

We'll be having turkey - Mum's bought a breast joint to feed 8, which should just do us for lunch and perhaps a little left for sandwiches, since two of the 8 are littles, and one of them is currently refusing to eat anything but cheese on toast. Boxing day will be game casserole.

In amongst all this will be smoked salmon, mince pies, wine, coffee and lots of tea...

My childhood Christmas lunch was turkey. Then for many years it was duck or goose (wife from Welsh hill-farming family).

This year we asked the kids and it's turkey again. I haven't roast one for years, but I'm looking forward to it.

It's not my favourite meat, but it will bring the memories flooding back. I'm quite excited.

Quiet day for two here. Brunch will be muffins with smoked salmon and scrambled eggs, and dinner is roast gammon, creamed potatoes, bread sauce, cabbage, honey-glazed carrots and parsnips with stuffing balls and gravy. Pudding will be a fruit sponge pudding with custard and cream. After a couple of hours doing beached manatee impressions, we'll hopefully have enough room for cheese and crackers :hungry:

On Boxing Day we'll have bacon sarnies, then a friend will be coming over for dinner, bringing "mystery meat" from the depths of his freezer (last year it was delicious pork, but until it defrosted we couldn't tell if it was turkey, or possibly even baby), complemented with with bubble and sqeak form the previous days leftovers (if we have any), plus carrots, parsnips, chestnut stuffing and gravy. No pudding plans as yet :ohmy:

Smoked salmon 'n cheese in little yorkshire puds
Roast leg of lamb, stuffed with barley and mushrooms, roast tatties, and as many veg as I can get ready
lemon cheesecake - yea, I know, boring ........... but not when you serve it inside the hollowed out lemon skins. Silly how one little trick impresses the table :smile:
