Was up at quarter to six this morning browning mince, softening onions, peeling garlic, chopping chillies. Whacked it all in the slow cooker where it will simmer for around twelve hours until dinner time. ;):tongue:

I think I make a pretty decent Chilli, but do you have the ultimate recipe?

I want to know!

From scratch or from a jar/ packet?

As jars go, Discovery's "wicked chilli" is the best of the bunch.

5.45 though? That's a bit odd.

that needs cumin and coriander too, i also use kidney and baked beans with plenty of seasoning

I'm no hippy, but I make a nice lentil chilli (recipe from the delectable Nigella ;)), which includes cocoa powder... :biggrin:

Cumin is essential, as is a crumbled oxo cube - I like a tablespoon of vinegar in the mix too. Sometimes a teaspoon of cinnamon will go in if we're feeling fancy.

What a lot of faff!

Onions, kidney beans, a can of tomatos, a bag of quorn mince, some whole and chopped chillis, salt and pepper simmered for a while is all it takes.

Cumin and cocoa powder are for gayers.

1 large spanish onion chopped
2 red peppers chopped
1 aubergine diced
5 large cloves garlic, smashed

1 dsp toasted and ground black cumin
1 dsp dried Mexican oregano

a few squares of bitter black chocolate or a TBSP mole paste



Brown the beef and pancetta, add the onions halfway through, near the end add the chili powders and herbs cook until they start to release their aromas. Add about 1/2 litre of beef stock, garlic, aubergine and peppers and cook in a slow cooker at least ten hours. Add the chocolate towards the end.

Serve topped with fresh coriander.

I don't usually put beans in the chili, but serve refried beans separately.

why becuase i use baked beans does that mean i work in a school canteen??? they add tom juice and some sweetness

Try telling that to the Aztecs, who probably first invented how to cook it and stuff... they'd soon show you what's what! ;)

Never heard of the dark chocolate thing before, but have come across making hot chocolate with chilli so may have to give that a go!
