This question was once used at a first meeting with a new client, as the ice breaker. A big- wig from the client's team replied without any hint of sarcasm that he would buy a helicopter and hire a pilot so that he could get to work earlier in the mornings.

Me? I'd buy a Defender and drive to Cape Town where I would buy a wine farm.

With unlimited funds I'd go for a range of bikes. There's no one bike that I know of that will serve all purposes, some will serve some purposes but with compromises. But if I had to go for one bike, I think a titanium audax bike that could take panniers might tick a lot of boxes for me.

Unlimited funds would see me wanting more than one bike - it would be nice to think I could try a bike and then just see if it felt good to ride, rather than worrying about what if it wasn't comfortable. If it was just the one bike then possibly a recumbent.

Like others above I'd have a fleet of bikes for example; tourer, racer, folder, mountain bike and one of these just coz I like the look of it:

Oh, and a well equipped workshop plus training so I could build my own frames.
