Upgrade two bikes: Cube, Scott, Pinerello, Cannondale etc. - what to look for?

Returning to cycling after getting a major back injury and due to being stuck in bed adding a good few (to many) stones on and getting a good payout looking to upgrade my Bikes
currently own a Scott Addict r4 with carbon wheels
and a Mondrakker tracker rr for off road
have been looking at the high end Cube range of bikes and like what i see but one of my LBS is telling me there not all the seem to be issues with hubs/rims/frames etc and telling me to look at well known brands like scott pinerello cannondale etc
any views????

did have a long relationship with raleigh dynatech's when i raced as i worked for a raleigh dealers at the time and picked mine up from the factory in person so have had a few british bikes but after riding the scott and its power transfer have become a covert to the carbon frames tbh
