Not in the oven yet but preparing a romantic meal for my wife & myself for New Year’s Eve. Beef fillet with red wine sauce served with parsnip croquettes & ginger & orange glazed baby carrots.
Just made the marinade for the beef and currently reducing the port/red wine to a glaze for the sauce

Ballsed up roast beef last night. Pretty disappointed.

2.7kg was advised medium at 25min per 450g but 2h20 in it was well done. Guests arrived an hour late which didn’t help either.
