The only nostalgic alloy or plastic bikes will be historic ones involved in feats like race-winning or notable adventures, kept in museums rather than ridden much.
Why?
Any old bike will be of interest to someone, regardless of pedigree.
It's often the least regarded models that become the rarest, as they tend to be discarded as 'consumables'.
Today's bikes will be just as much classics in years to come as anything from the past is now. Back in the sixties who'd have thought the Claud Butlers sold then (Mostly gas pipe specials in that era) would now be collectable?
I dont know about it becoming a classic but I think the Planet X Carbon Pro deseves a mention for bringing affordable carbon to the masses, there are lots of alternatives nowadays including buying direct from Chinese manufactures, but as far as I am aware PX were the first on a big scale.
