Bit weird...
If you ride off road without SPD then it's asking for trouble. Do you really use flat pedals off road?

My pedals came with the bike - they are VPE-527 Aluminium

I have used Karrimor walking shoes to cycle in. Never had a problem but then, although I off-road gently I don't do crazy downhill trail stuff.
I'm a sixty-something potterer with bad circulation. I need something warm and weatherproof.

Get some Shimano winter boots and ride with SPD would be my suggestion.
This will increase your effort you put in transfer to the wheel and be a much safer more economical way to ride
