I'm with you on this. I don't use any post cooking additives i.e.

  • salt
  • pepper
  • ketchup
  • gravy
  • sauces e.g. bechemel, apple, cranberry

to mask the tastes of the underlying food.

Ever so slightly off topic. Lots of recipes now include "fish sauce" in the list of ingredients. What is that a generic name for? I am guessing at Worcestershire Sauce cos of the anchovies, but I would like to know.

It's pretty easy to find and is de-riguer for many Thai/Malaysian dishes where W-sauce would be a poor substitute.

Thank you FF. I will be doing an on-line order with Mr Ocado next week, I am sure he will be able to supply some. We have a most excellent Thai restaurant near here, and I would like to replicate some of their recipes at home.

Blooming heck! I never knew that there were anchovies in Worcestershire sauce. Indeed there are.

If like Anchovies and you've never had Patum Peperium or Gentlemen's relish, may I suggest adding some to your order? Fab on toast and even better on toast with scrambled egg on top!
