Nice idea - Google says they grow to 15m. I've had enough of the trees previous owners speckled the place with.

Can you trim them to keep them about a metre high?

Can I take them from the local woods?

Euonymus Japonicus are good. There's a huge number of variegated varieties and they are weed-suppressant. A trim once a year would keep them in check.

Where in the country are you? What aspect? What soil? What budget?

Off the top of my head I'd say to go for a British native hedging mix and some wildflowers. Good for wildlife and won't end up looking like Torquay seafront.
