I can't decide whether I should sell a bike

If I might make an obvious suggestion here - shorten them a bit at a time. It's easy to take another inch off, but trickier trying to stick it back on.

Aye, bloke in the LBS said the best way to do it is to move everything along the bars so that it's in the position it would be if I shortened them and cycle round like that for a while to see if I'm happy before shortening them for real.

Well, that sounds sensible a bit boring.
You could do what I did - move everything as far in as possible, chop the ends off and then spend a week getting used to the handling being far twitchier than it was.
