Aye, bloke in the LBS said the best way to do it is to move everything along the bars so that it's in the position it would be if I shortened them and cycle round like that for a while to see if I'm happy before shortening them for real.

Well, that sounds sensible a bit boring.
You could do what I did - move everything as far in as possible, chop the ends off and then spend a week getting used to the handling being far twitchier than it was.
