One's own stomach produces mucus which protects the lining from enzymes and acid.
That's why vomit is slimy!

I did a survey of a house in Dunstable once. The owners were stewing up some tripe in vinegar on the hob at the time. It didn't take me long and it wasn't at all comprehensive. It was pure Beasley Street. "The perishing stink of squalor impregrates the walls..."
