As above currently got some gravel king 35c SK tyres fitted but rear is quite worn and looking to fit something slicker for the road. Anyone squeezed anything bigger than 35c on ? Wheel rims are Ryde Edge 25 OS

The rims should be able to take 40c, maybe more and you have plenty of frame clearance. Bear in mind depending on the make and size it may not make it feel any quicker.

Rims will be no bother but rear seat stays might be neat as it tapers in quite sharp. Front forks looks to have bags of room. Speed not a top priority but nothing too draggy

Yep you can , might have a slight file tread on them.
