The Massif Central and the Causses would be where I would go, finishing up with the Tarn Gorge down from St Enemie.
The hills can be quite big but, unless you go looking for them, are rarely too steep, and the Tarn Gorge and the limestone is beyond pretty.

When are you there? I went through the Auvergne in mid-May and all the fields were full of yellow flowers, with the variety changing with the altitude, from dandelions to primroses to little daffodils. It felt like ascending to a heaven. And it feels very remote and little-visited; sparsely populated farming villages.

Actually I lie about the hills; thinking back there were some fair old climbs, but still worth it!

I'd leave the canals and the coast well alone!
