You can also disable the blue tick so the sender cannot check if you have read the message. If you have deleted their number and placed a block they wont be able to see your activities re WhatsApp.

The only way would be for the old user to send a new friend request (different tel number) and you allow access

You can only disable blue ticks throughout not just one user. It also means you lose the ability to see blue ticks from messages you’ve sent to anyone else too. It’s a very blunt tool.
