Just a side thought. Have you tried spinning the legs by using a lower gear ? This may ease the cramp in the leg. Is it the calf that cramps ? I get a cramp like pain in my left calf and if I ease off a bit it goes. It has nothing to do with hydration. Mine I think stems from a calf strain or tear some time ago. Hope you can get it sorted.

I only drink when there's an opportunity to pee.
That's already since school time, quite a While ago.
I make up for it later.
Then I drink 2 liters in 30 min.
If the day has been hot, make it 5 min.
When a pauze at work, I often pass a 1.5 liter bottle with a pauze to breathe.
What also matters aLOT in this is, for me, eating enough.
Because if not, I enter some constant peeing need modus.
That is, a dehydration that can end in first seeing a clear sky night then nothing.

I had such occasion happening in early spring this year, there had been a sudden change in temperature cold>hot, after cycling a whole afternoon in the evening standing in a shop queu for the counter. I suddenly started to feel dizzy. My vision went gray, then black with stars.
I tried to find something to hold (I had seen a nearby fastsell rack), but it had nothing that my fingers could grip on, so I ended on the floor, with my vision slowly restoring there.
People helped me sitting, back up, I left my purchases, went first to eat and drink, then returned to pass the counter then cycled 20 km back home as if nothing had happened.

Since, if I start feel tired, I stop whatever I'm doing, to eat and drink. And always have something with me, in case bike not in short reach like while in shop.
Because, such can end badly when it's along the road with nobody around. It's not worth the risk.

I started to eat stuff with more saturated fat.
After experiencing that it gave me more and longer lasting energy than whatever including even potato- or corn chips with low% saturated fat due to vegetables oil of that kind (= most, cacao being an exception but they put 50% sugar in it, and 25% sugar / 75% cacao is priced doubledoubled, and price, just like potato, doubled since the lockdown then sanctions economical sabotages.

To take into account in all this: body is a complex thing, everyone has an own story.
This is mine, it doesn't mean it's yours. It's what it is: one of a number of possible causes.
As far as I know, I don't suffer a disease. I'm sometimes sick days upto a week, but very rarely not so that it keeps me home and even less in bed. I found that when feeling sick, nevertheless going out for a ride, reduces the time sick.
It's only when feeling abnormally tired, and eating doesn't help, that you should think twice about going out.
So I would say aboves story could apply to others as well.
